Pakchoi or Bokchoi is a member of the cabbage family along with kale and broccoli. Seeds germinate readily and grow quickly, so it’s very necessary to sow in small batches regularly for continuous harvests. Pak choi likes cool, damp conditions, so keep plants well watered and in light shade, especially in summer. It can be harvested as early as 30 days after seed planting. You can also allow it to mature fully before harvest.

Radishes take between 22 and 60 days to grow, depending on the variety.

Sow radish seeds one inch apart in rows one foot apart in loosened soil. Cover them 1/2 to 1-inch deep and water them gently.

Keep planting radishes every ten days for a continuous harvest. One week after the radish seedlings appear, thin them to every two or three inches. For radish seedlings like Daikons, which will form bigger, longer roots, thin to every four to six inches.

Water frequently in summer to ensure that the soil remains cool.

Lightly break the surface with a small hoe to let water trickle down.

Remove weeds as they appear.

Other types of lettuce require 6 to 8 weeks to reach full harvest size. Lettuce thrives and grows fastest in full sun, but it also grows well in part shade. In warm regions, try to select a growing spot that offers afternoon shade. The ideal soil for growing lettuce is moist but well-drained. Lettuce seeds need light to germinate, so don't sow them too deep. Seed may be sown in single rows or broadcast for wide row planting (loose-leaf varieties are best for this). When broadcasting, thin 1- to 2-inch tall seedlings for the proper spacing.

Spinach likes full sun but will tolerate partial shade. Prepare the planting bed by amending the soil with rich compost or aged manure. Mini-till or spade the ground and level it off with a rake. Mature spinach has a long taproot, so loosen the soil to between 12 and 18 inches. Once you've harvested your spinach, all you need to do is water it and wait patiently for the next harvest. Spinach leaves will regrow in just a matter of days.



6. Turnip

Turnips are very quick and easy to grow from seed to harvest in as little as five to ten weeks. They like cool, moisture-retentive soil, in an open, sunny location.

You can also sow in large containers outdoors, for harvesting when small.

7. Swiss chard

To plant, make a shallow drill in well-prepared soil in a sunny spot and sow your Swiss chard seeds thinly, approximately 1.5cm deep. Cover seeds with soil and water well. Sow in rows 40cm apart. When seedlings are approximately 5 cm (2”) tall, thin the seedlings to 10 cm (4″) apart. Seeds germinate in approximately 7-10 days.
